Wedge Salad

The wedge salad is back! When I was growing up, salad meant iceberg lettuce. Now that we have all of these readily available microgreens, we have forgotten how satisfying a bit of crunchy iceberg can be. If you want to mix up your dinner side salad, try this great throwback wedge salad. I like to serve mine with a simple thousand island dressing, but feel free to use a ranch or blue cheese dressing if you wish.

Sweet and Salty Sweet Potatoes

Do you love the combination of sweet and salty? This is an easy way to get your fix in a healthy weeknight side dish. These sweet potatoes cubes are rubbed with salt and a touch of cinnamon and cayenne and roasted until crispy on the outside and creamy on the inside. Roasted Eggplant with Garlic Oil

I keep waiting for Eggplant to become the new Kale. Eggplant somehow has a poor reputation and does not get much play in the American culinary world, yet I adore it. There are so many great recipes for grilling and roasting eggplant to coax out its sweet and creamy goodness. This recipe roasts eggplant rounds with a coating of garlic oil and the result is a savory side dish with a slight kick.

Kale, Coconut and Tofu Salad

This is a true superfood salad – the good oils of coconut, tofu for protein, brown rice for some body and, of course, kale. This simple but flavorful dressing if olive oil, sesame oil and soy sauce brings the dish together for a healthy and flavorful dinner salad. Thai Curry Raamen Bowl

I love a good Raamen bowl, especially on a winter evening. This homemade version with the warm flavors of coconut milk, curry paste and shitake mushrooms, the crunch of bok choy and snow peas along and their bright colors, makes for a both delicious and beautiful dinner. You can pick your favorite protein for this bowl: for a vegan version, use tofu, or add shredded leftover chicken or thinly sliced beef.

Veggie Chili

If you are looking for a delicious meatless fall meal, try this vegetarian chili. It is packed with veggies and warm spices and the bulgur gives it a great meat-like mouth feel. The best part, of course, is the great toppings that everyone gets to choose for their bowl: sour cream, jalapenos, avocados and cilantro. This is our go to salad and dressing, which you can throw together while someone is setting the table. My favorite way to make this dressing (or any dressing) is to put all of the ingredients into a small jar with a lid and shake it well. Once you get the hang of it, you can switch up the vinegars, oils and spices and make it your own!

There’s always drama around the vegetarian at the Thanksgiving Table: What should I make for the person who isn’t going to eat turkey? This is a great vegan dish, which features sweet potatoes (a thanksgiving staple) and is a great meatless meal any night of the week. Creamy (cream-less) Tomato Soup

Creamy Tomato soup is delicious, but who can eat all that cream on a regular weeknight dinner? Cooks Illustrated (of course) came up with a great way to mimic the creaminess of tomato soup without the cream, and this recipe is an adaptation from that. This easy to make soup, is our go to soup to eat with grilled cheese and our favorite paninis. I love to make extra and freeze some for future use.
