Grilled Spiced Wings

Sunday nights in the summer tend to be our BBQ night. We’re not rushing home from work and we love to be outside, especially towards evening as it cools off. These Grilled Wings are a family favorite, with their sweet and spicy rub that crisps up on the grill. I found this great recipe watching Cooks Country, where they test out all kinds of methods and come up with the best one. These wings are crisp on the outside and tender on the inside. I serve the wigs with a quick homemade vegan garlic ranch.

These potatoes are a quick and easy side that I often throw together when a meal needs the addition of a starch. There is very minimal prep and they can cook in the oven while you prepare the rest of the meal. Kids love these crisp potatoes too – especially with a little ketchup for dipping….

Zucchini Frittata

This is one of my go to easy meals for a last minute invite for dinner, brunch or when I don’t have much active prep time. Instead of the traditional method of making a frittata in a pan on the stove, I put it in a baking dish in the oven. Its hands off and fits more than my frying pan would. My family loves this and on the rare occasion that there are leftovers, they always make it into somebody’s lunch bag the next day. Serve this with some roasted herbed potatoes (you can use the same herbs as in the frittata) and salad or this delicious strawberry rhubarb for a weeknight treat!

Sweet and Tangy Slaw

Who doesn’t love how Trader Joe’s has made our lives easier? When I need a quick slaw, I buy a bag of their cruciferous crunch, which has a mix of chopped brussel sprouts, broccoli, kale and red and green cabbage. I add a handful of chopped scallions for some bite and a handful of craisins for some sweetness. Toss it with my sweet and sour vinagrette and you have a healthy and easy slaw in less than 5 minutes.

Salmon Burgers

In my house growing up, salmon burgers (or croquettes as we called them in the 80’s) were made from cans of salmon mixed with some eggs, breadcrumbs and maybe a little something green or crunchy if we were lucky. Easy, but it was never my favorite dinner. When I came across this method for making salmon burgers in an issue of Cooking Light, I knew it would be a hit. Instead of canned salmon, this recipe uses fresh salmon that is par-baked and them mixed with fresh and punchy flavors that are a far cry from the dull croquets of my youth. Serve with Sweet and Tangy Cruciferous Slaw on the side.

Every once in a while I love to have a big salad for dinner. When salad is our main dish, some of the heartier eaters in my family often ask me tongue and cheek, “so, now that we’ve had our salad, what’s for dinner?” The addition of crunchy whole grain croutons and lots of feta cubes along with the many fresh veggies makes for a hearty dinner, even for the salad skeptics. This dinner salad is inspired by a recipe from the Barefoot Contessa, with a few (healthy) tweaks.
