Make Your Own Panini

Make your own panini dinner rivals taco night in our house. We lay out a spread of different cheeses, along with condiments, like pesto and an array of mustards, and of course lots of different fun veggies to choose from. You can use the below list as a starting point for inspiration. Everyone picks their favorite fillings and waits patiently (☺) while their Panini cooks and gets brown and crispy on the outside and gooey on the inside.

Slow Cooker Belgian Beef Stew

There is nothing like coming home from a long day of work, to the smells of beef, beer and onions simmering in the kitchen. The first time we made this crock pot beef stew, we could not believe how flavorful it was. The Chimay beer is a must for this recipe, so don’t skimp on the beer. Puttanesca Fish

Putanesca has all of my favorite antipasti ingredients combined into one delicious sauce: olives, roasted peppers, capers and anchovies. Most recipes call for eating this sauce over pasta, but I was inspired by a recipe from Giada De Laurentiis where she paired it with fish - and I was sold. The salty and spicy sauce tastes perfect paired with any simply seared white fish and this bright arugala and fennel salad.

Arugala, Fennel and Orange Salad

Easy Rolled Manicotti

This is the only way to make manicotti, as far as I’m concerned. Thanks to this hack from Cooks Illustrated, instead of stuffing cheese filling into already cooked noodles, this manicotti uses softened no-bake lasagna sheets, into which you roll the filling. Once you make this Manicotti, with its creamy ricotta basil filling, and topped with marinara and gooey mozzarella, you too will be sold on this method. Serve this with steamed broccoli and your meal is complete!

If you like marinated artichokes, this one-dish fish meal is for you! The fish, cooked alongside zucchini, tomatoes and basil will make you nostalgic for the summer. Its worth the splurge for Sea Bass – there is nothing like its deep and creamy flavor. I like to serve this over quinoa or cous cous, to catch the delicious broth.

This dinner salad is packed with superfoods, beautiful colors and bold Asian flavors. While it’s not exactly a “one-dish wonder,” it is a salad and meal in one dish. Each time I make this, people ask me to pass on the recipe, so here it is! Based on a salad from Sweetgreen restaurant, this one brings together your veggies, starch and protein in one bite, each with its own special taste. Roasted marinated tofu and mushrooms are placed alongside chewy bright green kale and wild rice, and topped with beets, spiced sunflower seeds and a miso dressing that adds a deep salty Asian flair. Bring the leftovers to work with you for lunch - unlike lettuce, kale does not wilt!

Chicken with Potatoes and Onions

This is one of those meals that just smells like home. Not only is it a really comforting meal, but it is an easy to make, one dish meal. You layer the potatoes and onions on the bottom of the dish and top them with the chicken. As they cook together, the onions caramelize into sweet goodness, while the potatoes get creamy and flavored by the chicken and spices. Serve this chicken with a simple green salad or my roasted string beans or carrots.
