Beef Borscht

Borscht comes in lots of different varieties. The common denominator is the beets that form the base with its dark purple color. This borscht is a hearty beef soup that in addition to beets uses, leeks, celery cabbage, potatoes and flanken, which all come together in a melt in your mouth rich soup with tons of flavor. I love to add marrow bones or beef bones for extra depth. This is a great one pot meal when you are craving a bowl of hearty soup for dinner. (Adapted from Jewish Soul Food)

Slow Cooker Unstuffed Cabbage

Stuffed Cabbage rolls are a family favorite for special occasion holidays, but who has time on a weeknight to roll out each cabbage roll? My mother, who worked full time and had to get dinner on the table, used to make unstuffed cabbage for us to satisfy our desire to have this delicious meal more frequently. This meal has all of the essential ingredients and flavors of stuffed cabbage – a sweet and tangy sauce, rice, beef, raisins -yet you can put this recipe together in no time, and work while it cooks!

Brussel sprouts and butternut squash are a great balance for one another. They are both earthy fall/winter veggies and the green Brussels and bright orange squash look beautiful when served together. I like to add a Maple Dijon mixture for the last few minutes, which really brings all of the flavors together and adds a sweet and tangy flavor.

Chicken nuggets are the kid’s meal that all adults love to eat – and these are chicken nuggets that you can feel good about eating. I like to make a double batch of these and freeze the extras on a sheet pan and then once frozen, put them in a bag to eat later! And there you have it –homemade chicken nuggets that you can pull out of your freezer whenever you need them!

Sweet Potato Fries

I like sweet potato fries even better than regular French fries. There is something about the sweet, salty and spicy mix that gets me every time. And these are baked and not fried, so there is no mess to deal with. Try these alongside my vegetarian Deli Reuben sandwich or any other sandwich for dinner meal.

Vegetarian Deli Reuben Sandwich

If you love overstuffed, warm Deli Reuben sandwiches, you have to try this vegetarian version. It has all of the flavors of the sauerkraut, with the sweet relish dressing and swiss cheese, but with a meat substitute of marinated and crisped tempeh or tofu. Make sure to load on the Kraut and dressing and eat alongside my sweet potato fries for a delicious deli dinner at home!

Have you ever made a pasta dish where you cook the pasta in the sauce itself? The advantage of this method is the pasta absorbs so many good flavors, instead of just pouring the sauce on top and coating it. This is a relatively simple sauce and the spinach adds great color and a deep flavor – I always add extra spinach, to get the extra veggies in and make this a full dinner. Split Pea Soup

I love split pea soup on a cold winter night and this one can be made in no time using a pressure cooker. The split peas after cooking for 30 minutes in a pressure cooker or 2-3 hours in a Dutch Oven, will melt down and form a thick broth. My husband loves having a few hot dog rounds floating in his, so if you are up for a non-vegetarian option, try it!

Chinese Fried Rice

This is one of those takeout foods that taste even better at home. The best thing about Chinese fried rice is the combination of the flavorful Asian seasoned rice with shitakes, fried egg and small carrots and peas, all in one bite! This has all the great Chinese takeout flavor without the added grease.

Hot and Sour Soup

Every time I go to a Chinese Restaurant, I order their hot and sour soup. There is something about the spicy and sour flavors along with the warm broth that makes me want it over and over again. I have played around with many versions of hot and sour soup, to try to get the flavors right without requiring exotic hard to find ingredients and hours of work, and right now, this is the one I am making most. Feel free to add additional ingredients that you love in your hot and sour soup!
