Weeknight Green Salad with Balsamic Dressing
This is our go to salad and dressing, which you can throw together while someone is setting the table. My favorite way to make this dressing (or any dressing) is to put all of the ingredients into a small jar with a lid and shake it well. Once you get the hang of it, you can switch up the vinegars, oils and spices and make it your own!

Ingredients
  • 4Cups Lettuceyour choice
  • 1pint Cherry tomatoessliced in half
  • 1 Cucumber sliced into half moons
  • 1 Red Peppercut into bite sized pieces
  • 1/2Cup Red onionthinly sliced
  • Extras:sliced hearts of palm, artichoke hearts, olives
Balsamic Dressing
  • 1/2Cup Extra virgin olive oil
  • 1/4 Cup Balsamic Vinegar
  • 1tsp Dijon mustard
  • 1tsp Sugar
  • 1/2tsp Salt
  • 1shake black pepper
  • 1shake dried basil or oregano
  • 1/2tsp Dill weed, fry
  • 1/4tsp Garlic powder

Instructions
  1. Mix all of salad ingredients together. Place dressing ingredients into a small glass jar. Shake well and pour over green salad!
