Pesto and salmon are a great combination and as a bonus, this may be one of my easiest weeknight dinners, especially if you already have the pesto made. All you have to do is spread the pesto on the salmon and bake! It also tastes great room temperature, so it’s a great make-ahead meal. Serve with TG's Crispy Roasted Herb Potatoes and weeknight green salad.
Ingredients
  • 1 Side salmon
  • 2 Cups Basil leaves
  • 1/2 Cup Pine nuts
  • 2 Cloves Garlic or 4 if they are small
  • 1/2 Cup Extra virgin olive oil
  • salt and pepper to taste
  • 1/2 Cup Extra virgin olive oil
  • salt and pepper to taste
Ingredients
  • 1 Side salmon
  • 2 Cups Basil leaves

Instructions
  1. Place basil, pine nuts and garlic in the food processor and pulse until finely chopped. You may need to stop to scrape down the sides.
  2. Using the feeder tube, while the processor is running, slowly pour in the olive oil until the mixture forms a thick paste.
  3. Add salt and pepper to taste.
  4. Preheat the oven to 400.
  5. Wash the salmon and dry it well.
  6. Place on a parchment or foil lined baking sheet.
  7. Spread (about 1 cup) pesto on top of the salmon.
  8. Place the pesto coated salmon in the oven and cook until the pesto is beginning to just brown and the fish is cooked through, about 15-20 minutes, depending on thickness of the fish.
