This is a mix between a potato salad and mashed potatoes. The potatoes get mixed with a balsamic vinaigrette that kicks this up another notch.
Ingredients
- 1 pound Potatoes preferably new potatoes
- 2-3 Scallions trimmed and thinly sliced
- pinch Saffron
- 2 TBS Balsamic Vinegar
- 1 tsp Dijon mustard
- Salt and Pepper
- Salt and Pepper

- Boil the potatoes in a large pan of salted water for about 15 minutes until tender, then drain, keeping some potato water, if needed to loosen up the potatoes.
- Crush lightly with the back of a fork, then add the scallions and stir to combine.
- Season with salt, then add the vinaigrette and any additional potato water you think necessary.
