This is a mix between a potato salad and mashed potatoes. The potatoes get mixed with a balsamic vinaigrette that kicks this up another notch.
Ingredients
  • 1 pound Potatoes preferably new potatoes
  • 2-3 Scallions trimmed and thinly sliced
  • pinch Saffron
  • 2 TBS Balsamic Vinegar
  • 1 tsp Dijon mustard
  • Salt and Pepper
  • Salt and Pepper

Instructions
  1. Boil the potatoes in a large pan of salted water for about 15 minutes until tender, then drain, keeping some potato water, if needed to loosen up the potatoes.
  2. Crush lightly with the back of a fork, then add the scallions and stir to combine.
  3. Season with salt, then add the vinaigrette and any additional potato water you think necessary.
