I love a tangy slaw with lots of lemon and crunch from the cabbage. This one hits the spot, especially eaten along with BBQ beef sandwiches. I like to use less mayo for a lighter version, and this one uses considerably less mayo than many others. If you like your slaw less crunchy let it sit for a few hours before serving.
Ingredients
  • 1 Lemony Slaw I love a tangy slaw with lots of lemon and crunch from the cabbage. This one hits the spot, especially eaten along with BBQ beef sandwiches. I like to use less mayo for a lighter version, and this one uses considerably less mayo than many others. If you like your slaw less crunchy let it sit for a few hours before serving. 1 head Cabbage (green or purple), thinly sliced by hand or using a food processor 1 Onion, Red or white, thinly sliced into half moons 1 Carrot, grated 1-2 TBS salt 1 tsp pepper ¼ Cup Mayo 1-2 Lemons The cabbage, onion and carrot into a large bowl. Add the salt, pepper and mayo and stir to combine. Then add the juice of one lemon and taste. Make sure it has enough lemon and enough salt. If not, you can add more salt and more lemon juice. Cabbage thinly sliced by hand or using a food processor, green or purple
