For a great last minute side dish, try this broccoli. The method here ensures that the broccoli will be cooked through and also carmelized. Not only does this roasted broccoli have more flavor than steamed, there’s also less cleanup. Simply recycle the foil or parchment and you are done!

- 1-2 Heads Broccoli cut into florettes
- 2 TBS Olive oil
- salt and pepper to taste

- Preheat the oven to 450.
- Line a large sheet tray with foil or parchment and grease.
- Place the broccoli florettes onto the lined sheet. Drizzle broccoli with olive oil and salt and pepper.
- Cover tightly with heavy duty foil and place in the oven. Cook covered for 15- 20 minutes, until broccoli is soft enough to bite.
- Uncover and flip broccoli, if you like, to ensure even browning.
- Return to oven and cook for another 5-10 minutes uncovered until nicely roasted.
