Chocolate Cobbler
I know I say I’m not a dessert person – both because it’s not my go to crave-able food and I don’t like to measure… But, every once in a while, I do bake. Even more rare, is for me to serve a dessert (that is not fruit) on a weeknight…Now that I’ve gotten all of the apologies out of the way, I had to share this recipe. I had never heard of a chocolate cobbler, but came across this one from The Pioneer Woman and it is a great and EASY throw together dessert for a special weeknight meal.

Ingredients
  • 1Cup Flour
  • 2tsp Baking Powder
  • 1/4tsp Salt
  • 7TBS Cocoa PowderDivided
  • 3/4Cup Sugar, whiteDivided
  • 1/2Cup Milk
  • 1/3Cup Buttermelted
  • 1 1/2tsp Vanilla Extract
  • 1/2Cup Brown SugarPacked
  • 2Cups Hot Tap Water
Instructions
  1. Preheat oven to 350 degrees.
  2. Stir together the flour, baking powder, salt, 3 tablespoons of the cocoa, and ½ cup of the white sugar. Reserve the remaining cocoa and sugar.
  3. Stir in the milk, melted butter, and vanilla to the flour mixture. Mix until smooth. The mixture will be rather thick.
  4. Pour the mixture into an ungreased 8-inch baking dish, square or oval.
  5. In a separate small bowl, mix the remaining white sugar, brown sugar, and remaining 4 tablespoons of cocoa. Sprinkle this mixture evenly over the batter.
  6. Pour the hot tap water over all. Warning – DO NOT STIR – even if it looks really weird, this is the way this works.
  7. Bake for about 40 minutes at 350. The top should have formed a crust and there should be lots of gooey chocolate on the bottom.
  8. Let stand for a few minutes and then serve in bowls – stand alone or with some vanilla ice cream…
