Chicken Paprikash with Knokerly
Does it get more Hungarian than Chicken Paprikash? This dish takes all of the most popular Hungarian vegetables, green peppers, onions, tomatoes and of course lots of paprika, and slow cooks them with chicken until they are very tender and melt in your mouth. You can serve this with rice, which you can cook with the chicken and vegetable, but if you want to be authentic, try making the Knokerly, which are delicious Hungarian dumpling noodles. They soak up the gravy and were always my favorite part of dish when I was young. If you want to taste Hungary on a plate, this is the dish for you!

Ingredients
  • 3Pounds Chicken Pieceson the bone, skin removed
  • 1TBS Oil
  • 2-3 Tomatoeschopped
  • 1 Green Pepperchopped
  • 1 Red Pepperchopped
  • 2 Onionsthinly sliced
  • 3Cloves Garlicminced
  • 2TBS Hungarian Paprikasweet
  • 1Cup Broth
  • Parsleyfor garnish
  • salt and pepper to taste
Knokerly
  • 3Cups Flour
  • 1 1/2Cups Water
  • 2 Eggsbeaten
  • Salt
  • 2 Eggsbeaten
  • Salt
Instructions
Knokerly
  1. Bring a large pot of water to a boil. Beat eggs and salt in a bowl. Add flour and stir and add water and stir until it is thick and pasty. You will need to see how much water it needs to get to the correct consistency, thick enough to form a thin and gummy dough, see image.
  2. Then place the batter on a cutting board and using a knife scrape off, one by one, noodle sized pieces of the dough, into the pot of boiling water. You may need to dip the knife in the boiling water in between scrapes so that the dough does not stick to it.
  3. Cook knokerly for15-20 minutes and the drain.
Chuck Steak and Potatoes
  1. Heat oil in a large heavy pot over medium high heat. Sautee the peppers and onions until tender. Add salt and pepper to taste. Add the garlic and sautee for 30 seconds and then add the tomatoes.
  2. Add the chicken and brown for a few minutes.
  3. Then add the paprika, potatoes and broth bring to a simmer.
  4. Cover and cook for 20 minutes.
  5. Add the knokerly to the pot with the broth and continue to cook for at least another 15 minutes.
