Thai Curry Raamen Bowl

I love a good Raamen bowl, especially on a winter evening. This homemade version with the warm flavors of coconut milk, curry paste and shitake mushrooms, the crunch of bok choy and snow peas along and their bright colors, makes for a both delicious and beautiful dinner. You can pick your favorite protein for this bowl: for a vegan version, use tofu, or add shredded leftover chicken or thinly sliced beef.

I remember ordering this at our local Chinese restaurant as a kid – it was so fun to spread the plum sauce over the pancakes and then add as much of the filling as I wanted to each pancake. This is a vegetarian version, which features crunchy veggies, a delicious Asian sauce and tofu or chicken, for some added protein. You can feel free to swap out the tofu for chicken or another protein. I don’t have time to make my own chineese crepes, so I use warmed tortillas, but you can also make these in lettuce cups… Let each eater shmear their tortilla with their favorite teriyaki sauce, fill with the veggie filling and roll up and enjoy!

Who doesn’t like pasta alfredo? This is pasta alfredo with a little less guilt…I use whole grain pasta, lots of mushrooms, peas and just enough cream to make it taste like alfredo. Make this once and your family will keep on requesting it! (Adapted from Everyday Food)
