Shakshuka with Crusty Bread

Shakshuka is traditionally served as a breakfast meal in Israel - but I think this is a meal that needs to take center stage at dinner. In this one pan meal, tomatoes, onions, peppers and spices slowly simmer to make a delicious sauce into which you add eggs, cooked to your liking – hard or soft yolk. Serve this with crusty bread for dipping.

Stuffed Peppers

I love a good one pot meal and this is a family favorite. My family seems to enjoy it when they each get their own stuffed pepper filled with spiced rice, meat and sauce. A bonus here is that the entire meal is cooked in a large dutch oven – and who can resist a one-pot meal? (Adapted from Jewish Soul Food)

Rakott Krumpli (Hungarian Potatoes and Eggs)

Rakkot Krumpli is Hungarian comfort food at its best. My husband jokes that Hungarian foods use the same few ingredients over and over in different ways, and this one is no exception. It brings together many of the Hungarian classics: sour cream, paprika, potatoes and eggs - all which come together in this creamy and delicious one dish meal. My mother used to make this for us as kids and now my children love eating this slightly modernized (sorry Mom) version of the original dish.

Noki’s Moroccan Fish and Veggies

Our cousin from Israel once made this fish for us and it has become a regularly requested dinner in our family. Its middle-eastern spices along with the lemon juice and olive oil, transform a simple white fish into an exotic meal. As a bonus, you cook the whole thing on a sheet pan, which makes for a super easy cleanup. I like to serve this over couscous.

Grilled Spiced Wings

Sunday nights in the summer tend to be our BBQ night. We’re not rushing home from work and we love to be outside, especially towards evening as it cools off. These Grilled Wings are a family favorite, with their sweet and spicy rub that crisps up on the grill. I found this great recipe watching Cooks Country, where they test out all kinds of methods and come up with the best one. These wings are crisp on the outside and tender on the inside. I serve the wigs with a quick homemade vegan garlic ranch.
