White Chicken Chili

This is a great light yet hearty dinner, when you want to curl up with a warm bowl of hearty chili. Instead of beef, this chili uses chicken and even some kale at the end to round out this healthier version of the classic. Depending on what’s in season, add you favorite veggies. I like to serve this with some crusty bread.

Hot and Sour Soup

blank
Every time I go to a Chinese Restaurant, I order their hot and sour soup. There is something about the spicy and sour flavors along with the warm broth that makes me want it over and over again. I have played around with many versions of hot and sour soup, to try to get the flavors right without requiring exotic hard to find ingredients and hours of work, and right now, this is the one I am making most. Feel free to add additional ingredients that you love in your hot and sour soup!

Sea Bass over Potatoes and Leeks

blank
This is my go-to company fish dinner, if I am having guesys on a weeknight. The creamy and buttery sea bass topped with crunchy garlic rosemary breadcrumbs is already a delicious mouthful. Plating the fish over warm potatoes, leeks and a pungent balsamic dressing pushes this dish over the top. It is rich tasting, and just filling enough for a special weeknight dinner.

Have you ever had a super thin and crispy boneless chicken breast? This is the one to try. The key to this dish is twofold: pounding the chicken breast thin and the bright lemon and caper sauce that your pour over the top. Serve this with your favorite risotto and tasteguru’s arugala and fennel salad.

Slow Cooker Chicken Noodle Soup

blank
The Slow cooker is our best friend during ski season, and ski season has officially begun in our family. There is nothing like coming home from a long ski day, to a warm and hearty chicken noodle soup, packed with vegetables and tender chicken. This soup will be a sure hit among skiers and non-skiers alike! (Adapted from Cooks Country)

Egg Drop Soup

My kids love egg drop soup! This one is healthy and fresh – and tastes nothing like some of the goopy versions you may have had at a Chinese restaurant. And the best part is that you can throw this together in a few minutes while you are preparing the rest of your dinner.
