I make a lot of chicken soup for my family and the big question is always what to do with the soup chicken. I learned this recipe from my mother, who did not like to waste anything. She would take leftover cooked chicken from soup, in particular the chicken breasts and make this east chicken chow mein, which we all loved! Make this your own by adding your favorite veggies to the mix.

Homemade Chicken Nuggets

Chicken nuggets are the kid’s meal that all adults love to eat – and these are chicken nuggets that you can feel good about eating. I like to make a double batch of these and freeze the extras on a sheet pan and then once frozen, put them in a bag to eat later! And there you have it –homemade chicken nuggets that you can pull out of your freezer whenever you need them!

Chicken Picatta with Lemon and Capers

Chicken Pot Pie

I grew up eating those frozen individual portion chicken pot pies – they were a special treat and I loved them! The crispy dough top crust and the creamy chicken and veggies inside were a great combination. When I make chicken pot pie for my family, I usually make one big pot pie in a 9 by 13 dish, but if you are really motivated, you can make individual pot pies in ramekins. Either way, they will love them!
