Balsamic Glazed Endive

Endive is a great spring vegetable. I love the bitterness of the endive, which is not too powerful. I simmer the endive in broth and balsamic vinegar until it gets soft and the liquid makes a thick syrup that I drizzle on top. The sweet balsamic glaze pairs very well with the slightly bitter endive.

This dinner salad has a delicious mix of salty and sweet, crunchy and smooth. The salty feta and pungent pickled onions are balanced by the sweet raisins, delicata squash and balsamic dressing, while the smooth avocado contrasts with the crunchy nuts. My kids love this salad and polished off the entire tray – you never know what might happen when you serve a filling salad for dinner…!

If you love overstuffed, warm Deli Reuben sandwiches, you have to try this vegetarian version. It has all of the flavors of the sauerkraut, with the sweet relish dressing and swiss cheese, but with a meat substitute of marinated and crisped tempeh or tofu. Make sure to load on the Kraut and dressing and eat alongside my sweet potato fries for a delicious deli dinner at home!

Sea Bass over Potatoes and Leeks

This is my go-to company fish dinner, if I am having guesys on a weeknight. The creamy and buttery sea bass topped with crunchy garlic rosemary breadcrumbs is already a delicious mouthful. Plating the fish over warm potatoes, leeks and a pungent balsamic dressing pushes this dish over the top. It is rich tasting, and just filling enough for a special weeknight dinner.

Weeknight Green Salad with Balsamic Dressing

This is our go to salad and dressing, which you can throw together while someone is setting the table. My favorite way to make this dressing (or any dressing) is to put all of the ingredients into a small jar with a lid and shake it well. Once you get the hang of it, you can switch up the vinegars, oils and spices and make it your own!
