Sometimes you just want a nice hearty side of greens. I happen to love collard greens simply sautéed. You can serve these either barely sautéed, bright green and with some bite left in them or you can stew them until they are braised and soft. Either way, they are delicious!
Ingredients
- 1 TBS Olive oil
- 1 Bunch Collard greens stems removed and chopped crosswise into thick ribbons
- 1 Onion diced
- 1 Clove Garlic

- Heat a sautee pan with olive oil over medium high heat.
- Add the onions and sautee until soft.

- Add the garlic and stir for 30 seconds.
- Then add the greens and coat with the onions and garlic.
- Add salt and pepper to taste.
- Sautee until they turn bright green (2-3 minutes) if you want them to have some bite, or if you want to braise them, add ¼ cup water and cover and cook on a low flame for about 30 minutes or longer.
- Add salt and pepper to taste.
